Cacio e Pepe- what? Yep, french toast. It's like the best cacio e pepe pasta of your life but make it with bread. And, we take it to another level with drizzled yellow Cherry Tomato Sauce. No syrup needed, here, folks! 

Cacio e Pepe French Toast

Ingredients

2 slices thick bread like challah
3 eggs
1 cup milk of your choice
1/4 cup grated pecorino or parmesan plus 2 tablespoons extra to garnish
1 tablespoon unsalted butter
1/2 teaspoon salt
Freshly cracked black pepper, to season and garnish
About 1/4 cup Our Pantry cherry tomato sauce
Flaky sea salt, for garnish

Preparation

  1. In a small saucepan heat up the sauce over low heat and once simmering remove from the heat.

  2. In a large bowl or baking dish whisk together the eggs, milk, cheese, salt and pepper.

  3. Dip the bread in the mixture on both sides and let sit in it for about 2 minutes to really absorb the batter.

  4. In a large non stick pan add the butter and heat over medium low heat. When the butter is starting to brown slightly add the bread.

  5. Cook on both sides for about 2 to 3 minutes or until the cheese crisps and the bread is golden brown.

  6. Spoon a few tablespoons of sauce on your serving plate and layer the French toast slices with extra cheese, black pepper and some more sauce on top to finish. Finish with flaky sea salt.
