Sweet Ginger BBQ Squash

This side dish is perfect for any holiday dinner party, or a weekday meal. Our Sweet Ginger BBQ does all the heavy lifting. The toughest part? Cutting up the squash and peeling the onions, but if you opt for pre-cut squash or frozen cippollini this dish is a cinch. 

Roasted Squash and Cippollini Onions with Sweet Ginger BBQ

Serves 10

Cook time: 1 hour

Prep time: 15 minutes

 

Ingredients: 

3 acorn or delicata squash 

12 cippollini onions (fresh or frozen)

1/4 cup Sweet Ginger BBQ

Olive Oil

Salt + Pepper

Herbs for garnish

Instructions:

Preheat oven to 425.

Remove and discard the ends of the squash. Cut the squash in half and scoop out stringy bits and seeds. Cut the squash into 1.5 inch crescents. We like leaving the skin of the squash on here when using Acorn or Delicata varieties. 

Remove and discard the ends of cippollini onions and exterior skin.

Toss squash and cippollini onions with a healthy coating of olive oil, salt and pepper. Place on a parchment-lined baking sheet. Roast in the oven for 25 minutes, until golden on one side. Remove pan from oven and flip squash to cook other side. Cook for another 20 minutes. Remove from oven and toss with Sweet Ginger BBQ. Put back in oven for 15 minutes until golden and bubbling.

Serve in a bowl. Drizzle with some move olive oil and garnish with your favorite herbs.
